Managing the day-to-day operations of the department and providing leadership and direction in planning departmental activities.

Managing and coordinating the food management activities of the Medical Center which includes providing food to patients, employees, and visitors through the patient tray service, cafeterias, and/or special functions.

Overseeing food production and nutrition care to ensure a high standard of quality.

Working in collaboration with and under the direction of the Site/Region Manager Food & Nutrition Services to ensure that all Food & Nutrition Service programs are standardized as they relate to:
•Best Practice/Process Improvement initiatives
•Quality standards
•Departmental policies/procedures/protocols
•Capital budgeting
•Strategic goals/objectives
•JCAHO compliance
•Staff resource sharing/allocation

Supervising the preparation and service of food and beverages. Evaluating and recommending changes in techniques, methods, procedures, products, and equipment to ensure an efficient operation within established budgetary guidelines.

Supervising schedules, assigning and monitoring the work of chefs, assistant chefs, cooks, and food preparation staff. Maintaining adequate staffing levels to ensure an efficient operation in accordance with on-site feeding needs and special functions.

Performing human resources responsibilities for staff which include interviewing, selection of new employees, promotions, staff development, performance evaluations, salary adjustments, resolution of employee concerns, disciplinary counseling, terminations, and employee morale.

Assuring that sanitation standards comply with applicable regulatory agencies; reviews daily with staff.

Developing and implementing menu standards with site managers. Conducting bi-annual menu evaluation with seasonable modification. Directing the planning of menus for all on-site feeding; recommending changes, additions, or deletions of items.

Collaborating in the implementation and maintenance of a computerized menu management system.

Developing forecasting, ordering, and evaluating systems to assure the smooth operation of units.

Developing and maintaining inventory and security procedures for production units.

Ensuring proper labeling, storage, and accurate accounting of food items in the production units.


Skills / Requirements
General Qualifications

Knowledge of Dietetics, Food Service Management, or Hotel and Restaurant Operations, equivalent to that which would be acquired by completing a regionally accredited bachelor's degree program.
OR
Knowledge of Culinary Arts, Diet Tech, or Food Service Operations, equivalent to that which would be acquired by completing a regionally accredited associates degree program.

Knowledge, skills and abilities required to perform this job are typically acquired through five to seven years of progressively responsible experience in managing a food service operation.

Leadership experience should include management of staff, budgets and multiple human resources functions at the manager level.

Demonstrated oral and written communication skills.

Ability to analyze and interpret financial data.

Planning, organizing, and effective time management skills.

Excellent communication skills.

Strong customer service orientation.

Ability to anticipate and solve problems.

Computer literate.
